A quick reminder about my food reviews  (and other reviews) on the Get Cooking food blog:  I am sent products to review.  I am not paid for these reviews nor encouraged what to say in the least.  Over the years I’ve learned this, If someone has a product that’s great, they don’t mind sending it out into the blogosphere to be reviewed. They have confidence in the quality of their product and, it’s been my experience that it’s for a very good reason!  All of my reviews are written entirely by me, with all of my own opinions and rambling.  I respect you too much to ever be anything but completely honest with you – so if I encourage you to try something, you can rest assured that you should do just that.

I take this stuff almost as seriously as I take my morning coffee!

A recent product I was sent to review is pictured here: Kodiak Cakes 100% Whole Grain Frontier Flapjack and Waffle Mix (Buttermilk & Honey).  I was sent two boxes and only one remains… and it’s almost half gone. Yes, it’s that good.

The first thing I noticed was the cool box. Though I wouldn’t care to meet one face to chest, I have a STRONG fascination with bears so I was smitten by the guy on the front right off the bat. Leave it to me to be impressed by a box, but this is one cool box. Don’t judge me, please.

Naturally, I had to make some flapjacks right away. I grabbed my bottle of Log Cabin Syrup and didn’t waste a minute. I made some with blueberries and some without and every single flapjack was fantastic.  I even gave the flapjacks the old “How do you taste without butter and syrup” test and they passed with flying colors.

To be honest, I really wasn’t expecting flapjacks from a mix to taste this good. Seriously, how could anything that’s so easy and so fast to make actually taste great?  Fortunately, they taste fantastic!

Most people today need their meals to be fast, easy, and accomplished in as few steps as possible.  With Kodiak Cakes Frontier Flapjack and Waffle Mix, the steps couldn’t be simpler:

  1. Add water
  2. Cook
  3. Eat

Kodiak Cakes has a great tutorial called 10 Tips to the Perfect Flapjack that’ll serve you well.  Normally, I make my pancakes as thick as possible, but (in my strange little mind)  I envision flapjacks thinner than pancakes, so I made them thinner on my first batch.  The next time I made flapjacks, I made them thicker. I wanted to see how a mix would hold up to the normal way I make pancakes.

It held up like a champ!

Some people mix their fruit into the batter, I just place them on top as they begin to cook. Less chances of getting blue pancakes that way.

Bob’s Red Mill Muesli + Vanilla Almond Milk = Delicious Cold Whole Grain Cereal

Before I get to the heart of this post… aka a delicious, healthy, and – again – delicious cold whole grain cereal recipe starring Vanilla Almond Milk and Bob’s Red Mill Muesli… I just want to give a little sermon about eating healthy.

I promise to make it short.

There are a lot of health problems we can prevent simply by putting healthier foods into our bodies.  Diabetes, heart disease, and even cancer are monsters none of us wants to ever find on our doorstep.  The odds of them showing up (talk about unwelcomed guests!) can be greatly reduced simply by eating healthier foods.

I’ve always tried to eat as healthy as I possibly can, and strive to feed my family the healthiest meals possible. Fortunately, there are a lot (and I mean A LOT) of deliciously healthy and healthily delicious foods available these days.  Truth be told, healthy tastes better than unhealthy these days.

My most recent find is one of my favorites: A delicious cold whole grain cereal made with Bob’s Feed Mill Old Country Style Muesli.  On the back of the bag, there are recipes and instructions for hot cereal and for cold cereal.  The hot is freaking amazing, but I’ve become somewhat addicted to the cold cereal.  I’ve made it with milk, 2 percent milk, coconut milk, almond milk, and apple juice – and it’s wonderful with each and every one.  However, when it pairs with Vanilla Almond Milk, it’s simply out of this world fantastic.

It’s also STUPID GOOD with vanilla yogurt.

I love a bowl at breakfast and have fallen in love with having a bowl before bedtime. If you’re going to have late night snacks (and if you’re like me, you pretty much insist upon it) – they might as well be healthy ones, right?

Look in your grocery’s health food section or cereal aisle for this as well as other varieties of Bob’s Red Mill products. I think we’ve tried them all in our house – and have never been anything but blown away.

Cold Cereal: Soak 1/4 cup Bob’s Red Mill Muesli in 1/2 cup yogurt, milk, or fruit juice for 5 – 10 minutes (or overnight like the Swiss do) and enjoy. Makes 1 serving.

Breakfasts are especially tricky when trying to eat healthier. There are so many unhealthy ways to go wrong. Bob’s Red Mill cereals can help keep you on the right road – the road that leads to better health and a longer life.

That’s a road I want to stay on!

Healthy Fruit Nut Muffins

In keeping with the healthy kids theme we have going today, here’s a great recipe featuring Nielsen-Massey Madagascar Bourbon Pure Vanilla Powder (contains no alcohol or sugar….. just outstanding flavor).  Just look at the amazing ingredients in these muffins.  Everyone in your family will gobble these up, including kids.

Healthy Fruit Nut Muffins
Makes 1 dozen muffins

2 cups unbleached all-purpose flour
½ cup firmly packed dark brown sugar
1 teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 egg, lightly beaten
1 cup plain yogurt
½ cup (1 stick) butter, melted
1 teaspoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Powder
½ cup shredded carrots
1 cup coarsely chopped peeled apples
½ cup raisins
½ cup dried cranberries
½ cup coconut

Preheat the oven to 400 degrees. Spray twelve muffin cups with nonstick cooking spray.

Combine the flour, brown sugar, cinnamon, baking powder, baking soda and salt in a large bowl. Add the egg, yogurt, butter and vanilla powder and mix with a wooden spoon; do not over mix. Stir in the carrots, apples, pecans, raisins, cranberries and coconut; the batter will be thick.

Fill each muffin cup with 1/3 cup batter. Bake for 20 to 25 minutes or until golden brown. Cool on a wire rack.
