Lucky Rice: Review of a Gorgeous New Cookbook

You’re looking at one uncommonly beautiful cookbook. Lucky Rice: Stories and Recipes from Night Markets, Feasts, and Family Tables, by Danielle Chang, is about as lovely (inside and outside) as a cookbook can get.

What would you expect from a cookbook that was both an O Magazine “Cookbook of the Month” and Yahoo! Food’s Cookbook of the Week? You have to be a pretty special cookbook to achieve either one of these distinctions… but both? Wow!

After I received my copy in the mail, the first thing I thought was, “It’s even more beautiful and nicer than I’d expected.” You can tell, at first glance, that this is a high quality cookbook. Hardback, gorgeous, colorful, and filled with beautiful pictures.

As I always say in my cookbook reviews, though, looks will only get you so far in life. You have to have substance! When it comes to cookbooks, this means you’d better be filled with wonderful information and delicious, doable recipes.

If we’re being 110% honest, when I first began looking at the recipes, I was a little afraid that the cookbook was going to be a complete disaster in the “doable” category.  Somehow, when I flipped open, the first 3 recipes I saw called for ingredients I would either never use or could not easily find in my hometown.  I mean, there’s simply no way I’m going to find a Longgang heritage chicken in western Kentucky.

However, when it comes to cookbooks (remember I’m the avid collector with a collection numbering in the hundreds), I’m not easily dissuaded. I made myself a chai tea latte and got comfortable in my favorite chair. Within 5 minutes, I discovered that the vast, vast, vast majority of recipes in Lucky Rice are completely doable. What’s more, they’re recipes you will want to do over and over again.

Just a few of the recipes that fit this description are:

  • Savory Rice Balls
  • ABC Beef with Broccoli
  • Vietnamese Banh Mi
  • Perfect Steamed Rice
  • Steamed Turnip Cakes

After I found so many recipes that I could easily find ingredients for (at my neighborhood Kroger, even), I went back and confronted the first 3 recipes I’d seen. I looked them over and decided that even they could be approached with a few simple substitutions.

Substitutions is a word most people don’t take into consideration when judging cookbooks. They fail to remember that just because a particular recipe calls for one thing doesn’t mean they have to make it that way. For example, one of my favorite “go to” recipes – for Spinach Artichoke Dip – was actually tweaked to the point of barely resembling the original recipe and, trust me, it’s a knock out.

As for the ingredients I can’t find at Kroger, they would most assuredly be easily found at an Asian market or even in a super store in a larger city. When all else fails, I turn to Amazon. They haven’t let me down yet.

Lucky Rice is so much more than just good looks and exciting and delicious recipes – it’s an education in Asian Food Culture…. and it is completely fascinating. The Asian community’s respect of and love for food is palpable. It makes you realize how they’ve been able to come up with some of the world’s most beautiful and scrumptious dishes of all time.  They have so much pride in what they “create” in the kitchen.

One-Skillet Pork with Wild Rice and Herbs

Pork Recipe: One Skillet Pork with Rice and Herbs

I love chicken as much as the next person (if the next person’s a vegetarian, then it’s safe to say I love chicken recipes more than them) but – let’s be honest – there are only so many ways you can cook that culinary bird.  Besides, variety is the spice of life, and, like a spice rack, the more variety the better.

I’m using pork more and more in my daily cooking.  The Other White Meat is just as delicious as chicken and it’s a lot more versatile than some people may realize.

As far as nutritional value is concerned, today’s pork is leaner than ever before.  Pork is an excellent source of thiamin, niacin, riboflavin, vitamin B-6, phosphorus and protein and a good source of zinc and potassium.

From The Other White Meat.com: Pork today compares favorably for fat, calories and cholesterol with many other meats and poultry. While providing a greater amount of vitamins and minerals, many cuts of pork are as lean or leaner than chicken. Pork tenderloin, for example, is just as lean as skinless chicken breast and meets the government guidelines for “extra lean.” In total, six pork cuts meet the USDA guidelines for “lean,” with less than 10 grams fat, 4.5 grams saturated fat and 95 milligrams of cholesterol per serving. Any cuts from the loin – like pork chops and pork roast – are leaner than skinless chicken thigh, according to USDA data. Pork steaks or roasts from the leg (“fresh ham”) are also lean choices.

Give this recipe (pictured above)  a try this week, you’ll soon be praising Pork like never before.

One-Skillet Pork with Wild Rice and Herbs Recipe

1 pound pork tenderloin, lean, cut into bite-sized pieces
1 8-oz package sliced white mushrooms, OR brown mushrooms
1 1/2 cups chicken broth, reduced-sodium
1 cup uncooked white and wild rice blend*
1 tablespoon Italian herbs, herbes de Provence OR other dried herb blend
1 1/2 cups frozen mixed vegetables, thawed
Salt and black pepper

In a large skillet or sauté pan with a tight-fitting lid over high heat, combine pork, mushrooms, broth, rice, and herbs. Bring to a boil, reduce to a simmer, cover, and cook 15 minutes.
Stir in mixed vegetables and continue to cook until liquid has absorbed, rice is tender, and pork is cooked through, about 5 minutes.
Season with salt and pepper to taste and serve.

Serves 4

*Note: To make sure they’ll be done at the same time, use an already-combined mixture of white and wild rice. Look for a blend that has a cooking time of about 20 minutes.

Serving Suggestions:
Nothing is easier than a one dish meal, especially for a busy weeknight. Serve with a mixed greens salad tossed with a simple vinaigrette.

Knorr’s Recipe for Chicken and Vegetables Over Rice

Chicken Recipe with Rice and Vegetables

The following recipe is from Knorr’s and calls for a package of their outstanding Rice Sides –  Cheddar Broccoli.  Knorr’s side dishes are quick, easy, and blissfully economical – but you know what a stickler I am.  If I didn’t taste perfection in every single bite, they’d never go in my cart.  But I do, and they do… again and again!  It’s funny, I’ve loved their pasta sides for nearly 300 years (I age pretty well) but I never tried their rice sides until fairly recently – with age comes wisdom.  The rice sides are every bit as delicious as the pasta sides.

Try a few different varieties for yourself this weekend – you’ll wonder why you haven’t been Knorr-ing all along.   I could so write commercials.

Grilled (or Broiled) Chicken and Vegetables Over Rice

INGREDIENTS
2 Tbsp. I Can’t Believe It’s Not Butter!® Spread, melted
4 tsp. Italian seasoning
2-1/2 lbs. chicken parts
2 medium zucchini and/or yellow squash, sliced diagonally
1 medium onion, cut into 1/2-inch-thick slices
1 medium red bell pepper, quartered
1 package Knorr® Rice Sides™ – Cheddar Broccoli, prepared according to package directions

PREPARATION
1. Blend Spread with Italian seasoning in small bowl.
2. Brush chicken and vegetables with seasoning mixture.
3. Grill or broil chicken and vegetables, turning occasionally, until chicken is thoroughly cooked and vegetables are tender. Serve chicken and vegetables with hot Knorr® Rice Sides™ – Cheddar Broccoli.
