Due to health reasons, I have to follow a pretty restrictive diet… gluten-free, egg free, no red meat, dairy-free, low FODMAP. Not complaining, mind you, I’m so thankful for the things I CAN eat, I don’t worry about the things I can’t eat.
I’m also very thankful that there are so many wonderful restrictive diet products, ingredients, foods, and cookbooks on the market. I’ve found myself eating a lot more vegan meals and sides lately. They make my digestive system happy and, trust me, if it’s happy, I’m happy!

I’m not (even remotely) going to tell you how or what to eat. I will say that the more plant-based meals I add to my diet, the better I feel. If you have to or choose to eat vegan, this is a book you will very much want in your collection.
