Lemon Miso Roasted Brussels Sprouts Recipe (Vegan, Keto)

May 24, 2020 By Joi Sigers

Vegan Keto Lemon Miso Roasted Brussels Sprouts

Lemon Miso Roasted Brussels Sprouts Recipe from Fresh N’ Lean!

In the coming days, weeks, months (time has no meaning these days), I’ll be adding a lot more keto, vegan, and gluten-free recipes to the food blog. While I have to eat gluten-free, I find that a lot of vegan and even keto recipes are simply delicious. After all, you don’t have to strictly adhere to a diet to enjoy its recipes and any extra healthy meals you inject into your weekly menu plans is a positive thing.

I also want to apologize for the lack of regular updates lately. In all honesty, I simply fell behind in all of my web publishing and wasn’t sure how or where to jump back in and get back into the swing of things. The pandemic touches us all in different ways – and, frankly, it makes me not want to do much beyond spending time with my family & cats, cooking, flower gardening, and watching old movies.

I’m trying to fight out of the rut… but, let’s face it some ruts are harder to leave behind than others. This one’s been so sweet, pulling away from it seems akin to throwing away a piece of peanut butter fudge.

At any rate, here is where the regular recipes, food reviews, and other babbling kicks back in with regularity.

Why not start things back off with a delicious recipe featuring a newfound obsession, Brussels Sprouts?! This is an outrageously tasty, easy, and beautiful dish. Enjoy!

The delicious recipe is from Fresh N’ Lean!

You can find Red Miso Paste on Amazon.

350 Best Vegan Recipes: Great Cookbook for ANYONE, Vegan or Not

February 20, 2017 By Joi Sigers

 350 Best Vegan Recipes

One of the cookbooks I’m currently getting the most use out of is Deb Roussou’s 350 Best Vegan Recipes (Amazon link).

Am I a vegan? No.

Am I a vegetarian? No.

Am I a vegan half the time? No.

Am I vegetarian half the time? Not so much.

And yet… this is a cookbook that I use regularly for recipes, ideas, and inspiration for my own recipes.

The last part of that, “inspiration for my own recipes” is probably the number one way I use cookbooks. While I almost always make it the way the recipe states first, I do love to take a great recipe for a joy ride and see what wonderful other sights we can see.

I’ll be posting a recipe in a few minutes that’s actually based on one of the smoothie recipes in 350 Best Vegan Recipes (Amazon link). The original “Desert Sunrise” is delicious, as are the other variations I’ve tried. Adding aloe vera juice and sparkling water makes for some out-of-this-world smoothies. As soon as I post the recipe, I’ll come back here and link to it right about here.

350 Best Vegan Recipes Cookbook Recipe

Some of the recipes in this cookbook:

  • Pan-Fried Onion and Potato Hash Browns
  • Basic Pizza Dough
  • Quick Cherry Tomato and Pesto Pizza
  • Manicotti Florentine
  • Orecchiette Pasta with Eggplant Garlic Sauce
  • Roasted Red Pepper and Chipotle Dip
  • Ranch Dressing
  • Fragrant Rice-Stuffed Peppers
  • French Onion Soup with Croutons
  • Lemon Cucumber Tabbouleh
  • Stacked Green Chile Enchiladas
  • An a lot more – 350 in all.. and more when you “tinker” with the recipes and create new ones.

While this is not a “gluten-free” cookbook, substitutions are always possible and it’s usually as simple as replacing a regular pasta with a gluten-free pasta. Easy peasy.

350 Best Vegan Recipes (Amazon link) is perfect for anyone’s cookbook collection, because even if you aren’t a vegan or vegetarian and even if you (like me) have zero intention of becoming one (my love for burgers and fish are simply too strong), the healthy, creative, and delicious recipes will add both flavor and nutrition to your meals.

If you ARE a vegan or vegetarian… you’d better go ahead and order this book today because you will love it with all your vegetarian heart.

Review: The Blender Girl by Tess Masters

July 31, 2014 By Joi Sigers

The Blender Girl

The Blender Girl: Super-Easy, Super-Healthy Meals, Snacks, Desserts, and Drinks–100 Gluten-Free, Vegan Recipes! (Amazon link) is currently the number 1 bestseller in blender recipes on Amazon and is receiving rave reviews.

Here comes another one!

As I’ve said 1,000,001 times, I collect cookbooks – they’re an obsession of mine. I don’t know where the fixation came from, but since my first cookbook (I was 16 at the time)  to my most recent cookbook (never you mind about the age..), I treat each like any collector treats their individual prizes… like treasure.  Someone once asked if I sell my cookbooks after I’ve reviewed or read them. I said… well, never you mind about that, too.

The Blender Girl is the most recent prized addition to my cookbook collection.  It’s full of gluten free and healthy recipes and I can’t wait to try each one.   Although the gorgeous author is on the cover drinking a smoothie, this cookbook is more than just smoothie recipes.

Don’t get me wrong, I’m ALL about smoothie recipes and the ones in this collection are fantastic – but I do love the fact that The Blender Girl (Amazon link) has a wide variety of recipes. Below are just a few:

  • Raspberry Lemon Cheesecake (shake)
  • Pineapple Salsa (smoothie)
  • Artichoke and White Bean Dip
  • Incredibly Edible Edamame Dip
  • Onion and Herb Socca
  • French Dressing
  • Greek Salad/Dressing
  • Creamy Cauliflower (soup)
  • Thyme for Corn Chowder
  • Pesto
  • Chili
  • Pizza/Pizza Sauce
  • Creamy Mushroom Stroganoff
  • Key Lime Pudding
  • Orange Dreamsicles
  • Mint Chip Ice Cream
  • Sugar-Free No Pumpkin Pie
  • Healthy Butter
  • Many, many, many more!

If you’re committed to healthier eating, this honestly should be the next cookbook you buy. In addition to the wonderful recipes, you’ll learn the many benefits of eating a more wholesome diet. You’ll also learn all about  soaking, sprouting, and dehydrating; proper food combining; and eating raw, probiotic-rich, and alkaline ingredients. Fortunately, it’s all in a very easy to understand format.  You don’t need a dietitian’s degree or nutritionist’s experience.

You just need a blender!

This is a beautiful, very detailed, and reader-friendly cookbook that’ll help get you on your way to cleaner, healthier eating. See The Blender Girl: Super-Easy, Super-Healthy Meals, Snacks, Desserts, and Drinks–100 Gluten-Free, Vegan Recipes! (Amazon link) for more information. This book is also available on Kindle.

Note: I received this book from the Blogging for Books program in exchange for this review. The opinions are entirely my own.
