One of My Favorite Cookbooks: Rachael Ray 30-Minute Meals 2

June 2, 2016 By Joi Sigers

Rachael Ray 30-Minute Meals 2 Cookbook

Rachael Ray 30-Minute Meals 2
If you’ve read the food blog for any length of time you know I collect cookbooks as eagerly as a Reality TV Star collects compliments.  I’m so bad, I even have cookbook collections within my cookbook collections. The following are a few of these “extra special” collections..

  •  Rachael Ray
  • Michael Symon
  • Food Network-Related
  • Cooking Channel-Related
  • Cooking Light
  • Christmas-Themed
  • Thanksgiving-Themed
  • Gluten Free

Before I had to give up gluten/wheat, Cookie cookbooks, Bread cookbooks, Pie cookbooks, and Cake cookbooks were on the list. But I don’t want to think about that now. Some wounds never heal.

I take a great deal of pride in my Rachael Ray cookbook collection. I’m a huge fan of Rachael Ray’s and actually collect just about all things RR, not just her cookbooks.

The cookbook pictured above is one of my favorites: Rachael Ray 30-Minute Meals 2. Like each of her cookbooks, this is one I turn to again and again. I’ve memorized which recipes are in which cookbooks, so retrieving them is quick and easy.

Some of my favorite recipes from this cookbook are:

  • Sirloin Burgers with Mushrooms, Swiss, and Balsamic Mayo
  • Black & White Shakes
  • Spinach Artichoke Pasta Salad
  • Red Bean Salad
  • Root Beer Floats
  • Philly Steak Sandwiches
  • Ice Cream Sundae Sandwiches (use gluten free cookies to make it gf)
  • Fried Mozzarella Bites (I use gluten free breadcrumbs)
  • Burrito Bar
  • Special Fried Rice
  • Sausage Calzones (use gluten free pizza crust to make it gf)
  • Warm White Beans with Thyme
  • Balsamic (or Honey) Glazed Vegetables
  • Green Bean Salad with Red Onion and Tomato
  • Crispy-Topped Baked Beans with Bacon
  • Mexican Chunk Vegetable Salad
  • Rio Grande Spice Rub Strip Steaks
  • Honey Mustard Barbecued Chicken
  • Butter Bean Salad
  • Corn on the Cob with Chili and Lime
  • Maple Mustard Pork Chops with Grilled Apples
  • Emmanuel’s Baked Artichoke Hearts
  • Fresh Oranges with Lime Sorbet
  • Meatball and Macaroni Soup
  • Southern Green Beans
  • Winter Vegetable Stew
  • Spanish Beef and Rice
  • Mexican Rice
  • MANY More!

I’m actually making the Mexican Rice for supper tonight. It’s outstanding.

With such an overwhelming passion for cookbooks, I spend a great deal of time on Amazon. I’ve recently discovered something that has been a real game-changer: Used Cookbooks. I have had great success with these – I always “mark” the results I want with “Like New” and each time they have been, indeed, like new.  If you look, you can even find NEW cookbooks at Used cookbook prices.

My Motto: Money saved on one cookbook means money I can spend on the next.

Find Rachael Ray 30-Minute Meals 2 on Amazon, it’s easily one of my favorites in my collection.

Mark Bittman’s New Cookbook is a “Must Have”

July 16, 2014 By Joi Sigers

The VB6 Cookbook by Mark Bittman

Earlier I wrote a review of The VB6 Cookbook by Mark Bittman. I wrote the review on my Self Help Blog because the concept behind The VB6 program and recipes is a life changer.

Whether you’re interested in eating more vegan meals and less meat-based meals or you’re simply interested in fantastic flavors and fresh, fun recipes – I hope you’ll click through and take a look.  I highly recommend this wonderful cookbook.

In fact, I think it should be the next book you buy!

Spices & Seasons by Rinku Bhattacharya

May 29, 2014 By Joi Sigers

Spices and Seasons Cookbook by Rinku Bhattacharya

Spices & Seasons: Simple, Sustainable Indian Flavors

Over the years, as a food blogger, I’ve had the opportunity to review many wonderful cookbooks. The fact that I collect cookbooks has made this opportunity even sweeter, as every collector worth their salt LOVES nothing more than adding to their collection.  Although I’ve collected cookbooks since I first cracked an egg, my newest cookbook (Spices & Seasons: Simple, Sustainable Indian Flavors) is quite unlike any other in my collection. This is the first Indian Cuisine cookbook I’ve ever owned.

It’s not that I don’t love Indian food – far, far from it! I’ve just been intimidated by this exotic cuisine,  assuming the various flavors must call for spices I’d have to fly across country to find. A fear of heights (and, thereby, flying) rules that out, so I simply allowed any Indian food I enjoyed to take place in restaurants.

I don’t have to do that anymore!

In her beautiful cookbook, Rinku Bhattacharya has proven that you CAN create delicious, fresh, fantastic, and memorable Indian flavors in your own kitchen.  What’s more the recipes are as fun and exciting to create as the food is to eat.

I think that’s why I’m extra excited about this particular cookbook – it introduces new flavors and techniques to even the most veteran foodies.  Take it from me, my kitchen experiences a lot of cooking – to the tune of DAILY – so it’s accustomed to a wide variety of aromas and flavors and combinations of aromas and flavors.  But each time I make a recipe from Spices & Seasons: Simple, Sustainable Indian Flavors, my kitchen and I experience something new and beautiful.

Do I even have to tell you how exciting that is?!

Pineapple and Citrus Chicken Wing Kebabs

The first recipe I made from this beautiful cookbook was the Pineapple and Citrus Chicken Wing Kebabs (page 23) – pictured above. I didn’t have any drumettes on hand, so I just cut up the chicken I did have. I can’t wait to try it with drumettes, though.  My chicken was also skinless, and I’m anxious to try this recipe WITH skin.  It was absolutely delicious, though.  The cilantro, ginger, turmeric, and pineapple made beautiful music together and my taste buds danced on and on.

While cooking has never been boring to me, it can sometimes become commonplace.

Let’s see, let me mash the potatoes before I take the chicken out of the oven..

When I made the Classic Mint Chutney, it occurred to me that I’d NEVER made a chutney before. As soon as I made (and tasted) it, though, I was automatically calculating the next time I’d be doing so. The flavors were so exquisite and unique – my family and I couldn’t stop talking about it.

Mint Chutney

In fact, each recipe I’ve made from Spices & Seasons has been a huge hit in our home – one that we enjoy seeing, eating, and talking about.  Even recipes that I have made countless times are given a fresh new twist – like Stir-Fried Asparagus, for example.  Asparagus is my husband’s favorite vegetable, so suffice to say I’ve cooked more asparagus that you could ever hope to count. It just now occurred to me that if I had all the money I”ve spent on asparagus over the years, I could buy my husband a boat.

A big boat!

I had never made asparagus with ginger, though, and it honestly woke up flavors I never knew existed in asparagus.

Stir Fried Asparagus with Garlic

That’s part of the beauty about Rinku Bhattacharya (click the link for the author’s blog) recipes – they allow you to experience cooking AND food in a fresh new way.  It isn’t an overstatement to say that your love of cooking will be reawakened.  You’ll find yourself inhaling the exotic new aromas that fill your kitchen and feel a special kind of pride when your family raves and raves about the exotic flavors you created.

Best of all, the recipes are simple and easy to follow.  And you don’t have to hop a flight to India for the spices and seasons.

Some of the recipes in Spices & Seasons

  • Roasted Bell Pepper Chutney
  • Pineapple and Citrus Wing Kebabs
  • Roasted Spice-Rubbed Cauliflower Wedges
  • Fragrant Brown Lentil Soup
  • Masala Omelet Frittata
  • Chickpea Flour-Crusted Fish
  • Red Wine and Chili Pork Curry
  • Brined Turkey with Pomegranate Apricot Glaze
  • Chicken Orzo Pilaf
  • Whole Wheat Flatbreads
  • Chicken in a Creamy Yogurt Sauce
  • Quick Fix Lovely Red Spinach Tofu
  • Herb and Spice Roasted Chicken
  • Pineapple and Ginger Spiced Ham
  • Saffron Rice Pilaf with Cashew Nuts
  • Zucchini, Lemon Thyme and Onion Flatbreads
  • Fresh Ginger Apple Chai Cake
  • Saffron Pistachio Rice Pudding
  • Maple and Yogurt Custard (I have a date with this one Saturday)
  • MANY spice blends, Indian Relish, marinades, and rubs.
  • And a lot more recipes that’ll knock your socks off… maybe I should say they’ll knock your apron off.

About the Author

Rinku Bhattacharya is a native of Kolkata, India, currently living in a house with a vibrant backyard in Hudson Valley, New York with her husband and two young children. Rinku s practical, sustainable approach to Indian cooking, is showcased on her blog, Cooking in Westchester, and her Journal News column Spices and Seasons. Rinku has been teaching recreational cooking classes for the past nine years and also partners with the local, Down Home Markets to offer seasonal Indian cooking demos. She is author of The Bengali Five Spice Chronicles (Hippocrene Books, 2012). Rinku has also written for the Poughkeepsie Journaland several online sites, and appeared on CT Style television a few times.
This beautiful cookbook (such gorgeous photographs!) includes more than 150 wonderful recipes you’ll use again and again.  As someone who has to now strictly follow particular dietary guidelines (gluten free), I strongly appreciate the fact that many vegetarian and gluten free options are  included. Recipes are marked GF and V, which I think is particularly thoughtful and helpful.  A reminder, however – when a recipe is marked GF, always check out the individual products you choose.  For example, if soy sauce is listed as an ingredient, if you don’t buy gluten free soy sauce (Tamari Soy Sauce), your recipe will not be GF.
In addition to gorgeous photographs and off-the-charts delicious recipes, I also enjoy the author’s many tips and her priceless advice. Her warm personality and passion for Indian cuisine come shining through and you feel as though she’s right there beside you. Her energy and passion are palpable.
I just wish I could get a copy of this wonderful cookbook in everyone’s hands.  The recipes are fun and exciting to create and the food is flavorful, delicious, and exciting to eat.  That’s a lot of excitement waiting to be had!
While I can’t get a copy to every single person who reads this review, I CAN do the next best thing:
  • Point you to Spices & Seasons: Simple, Sustainable Indian Flavors on Amazon. This is one cookbook you’ll want to add to your collection right away.  I just can’t say enough good things about it.
  • The publisher has given me the green light to give one copy away to one lucky reader.  Simply leave a comment below – that’s all you have to do!  I’ll write the names on pieces of paper, fold them up, and will have a member of my family pick one at random. The publisher will then send the lucky individual their own copy. Simple as that.  I’ll announce the winner in the comments below this weekend. Good luck!

The giveaway has expired (congrats to the winner!), but this beautiful cookbook is available on Amazon… so be sure to grab your copy right away.

Chef Michael Symon’s 5 in 5 (Raving Review)

September 9, 2013 By Joi Sigers

Chef Michael Symon's 5 in 5

Every now and then (quite often, actually), my husband does something super cool.  His recent act of coolness involved ordering me a new cookbook from Amazon. Not just any cookbook, mind you. This was the newest cookbook by our favorite Food Network Chef, Michael Symon.

Major bonus points racked up right there.

Like any good Food Network groupie, I knew Michael Symon’s 5 in 5: 5 Fresh Ingredients + 5 Minutes = 120 Fantastic Dinners was about to hit stores (online and off) and like any good Food Network groupie, my plans were in place to grab a copy asap. I was beaten to the punch, but the only thing that matters is that 5 in 5 is in my grubby hands and it’s even better than I’d expected.

From the Back Cover:

With his boisterous laugh and Midwestern charm, Michael Symon has become one of the most beloved cooking personalities on television. For ABC’s The Chew, he developed a brilliant, simple formula to help home cooks pull together fresh, from-scratch meals on weeknights: a maximum of five fresh ingredients that cook in five minutes. This cookbook ties into the segment, featuring dazzlingly quick, satisfying dinners that the whole family will love.

Michael first teaches readers how to set up their pantries with essentials that make whipping up dinner easy. Then he shares 120 recipes for pastas, skillet dinners, egg dishes, grilled mains, kebabs, foil packets, and sandwiches illustrated in 75 photographs. This is streamlined cooking for busy families and firmly solves the “what’s for dinner?” conundrum for home cooks everywhere. With a 5 in 5 recipe, there’s always time for a home-cooked meal.

Unless you don’t own a television, never heard of Twitter, and just really don’t get out much – you know who Chef Michael Symon is.  He’s the co-host of ABC’s The Chew, he’s an Iron Chef on Food Network’s wonderful Iron Chef America and he has his own – equally wonderful – show on the Cooking Channel called Symon’s Suppers.

He has also served as a judge on Food Network’s Next Iron Chef. It’s the consensus in our household that he may just be the most knowledgeable, colorful and fair judge to ever sit on a cooking show panel.

Chef Symon is also the chef and co-owner of Cleveland, Ohio restaurants Lola and Lolita, the B Spot burger restaurants outside Cleveland, and Roast in Detroit, Michigan.

How he has found time to write cookbooks is beyond me but I’m thrilled he has. His cookbooks (to date!) are: Michael Symon’s Live to Cook, Michael Symon’s Carnivore: 120 Recipes for Meat Lovers, and his newest must have collection, 5 in 5: 5 Fresh Ingredients + 5 Minutes = 120 Fantastic Dinners.

The only exception I take with the description is this: I’ve made two of these dinners, so far, and Fantastic doesn’t even begin to cover it. These. Recipes. Will. Blow. Your. Mind.

The First Recipe I Tried: Orecchiette With Sausage and Kale

 Orecchiette with Sausage and Kale

When I was scouring through the newest addition to my cookbook collection, trying to figure out which recipe to make first, I came across one titled, “Orecchiette with Sausage & Kale.” The picture looked fantastic and the ingredients sounded full of promise, but the thing that sealed the deal for me was the fact that Chef Symon said it was his and his wife’s favorite pasta.

Good enough for me!

I was THRILLED to find that my favorite grocery store carried Orecchiette Pasta. I totally had my doubts. My celebration was short-lived, though, when I found that they were out of fresh blocks of Parmesan Cheese. I went with the next best thing:  Buitoni Shredded Parmesan Cheese. It’s excellent.

Ingredients for Orecchiette with Sausage and Kale Orecchiette Pasta

I’ve never used Orecchiette Pasta before, but I’m a raging fan now. People often describe it as being shaped like little “ears” but, personally it remind me of little Samurai Warrior helmets.  As a matter of fact, yes, my imagination is a fruit loop in a  world full of Cherrios.

The pasta is deliciously fun and I can’t wait to use it again.

As you can see in the picture on the left, this recipe is true to form – there are only 5 ingredients. How in the world SO MUCH FLAVOR and deliciousness can be achieved with just 5 ingredients is a mystery – one that can only be answered with one name: Michael Symon.

These 5 ingredients produce (in an incredibly short amount of time) one of the best pasta dishes I’ve ever made or eaten.  I might just call it THE best because, truth be told, I can’t think of one that tops it.  Again, the flavors are beyond amazing. If you use spicy Italian Sausage, however, be warned – it isn’t called spicy for nothing. There’s a great deal of heat involved. If you aren’t a big fan of fiery food, go with mild Italian Sausage or even 1/2 of each.

Spicy Sausage and Kale

When I added the kale to the spicy Italian Sausage in the pan, it turned such a beautifully vibrant color of green that I had to take a picture (above). If only I could’ve “captured” the aroma that filled the kitchen!

Orecchiette with Sausage and Kale

This recipe is simply unbelievably delicious and went immediately into my family’s Favorite Recipe Hall of Fame. Instant classic.

The Second Recipe I Tried: Salisbury Steak

Salisbury Steak (Recipe from 5 in 5)

Normally, when I get a new cookbook, I’ll try one of the recipes right away (can you say kid with a new toy?). However, I usually wait a week or two before I try the next recipe from the book.

With 5 in 5, I waited a really, really long time. The next day. I don’t know how I showed such restraint.

As soon as I tasted the Orecchiette with Sausage and Kale, I immediately reached for my copy of 5 in 5 to plot my next creation. Yes, it would mean another trip to the store. Yes, it would mean getting back out when I’d rather stay in – but, what can I say, I don’t mind suffering for my craft.

Fortunately, the next recipe I chose to make (Salisbury Steak) proved to be more than worth it. I knew it would be.

I chose Salisbury Steak because, to me, it’s a comfort food of the highest order. Salisbury Steak and mashed potatoes was one of my mom’s favorite meals to make while I was growing up. As I made this one, I knew she was looking down from Heaven, as intrigued by the process as I was.

I decided to make the Salisbury Steak recipe on Football Sunday – the first one of the season no less. This is made all the more impressive by the fact that every Football Sunday is a holiday in our house. The meal to kick of the string of holidays always has to be extra special and this year it was BEYOND special. I put the potatoes on to boil before the start of the first game and challenged myself to make the Salisbury Steak during halftime. I lined up the ingredients I’d need, but didn’t do any prep work.

When halftime arrived, I shot off for the kitchen. This was the simplest, most beautiful, and most delicious Salisbury Steak of all time. Not only was the meat, itself, mouth-watering and delicious, the sauce was a culinary experience for the ages all by itself.

And, again, with very few ingredients and a very short amount of time.

Mind, blown.

As the teams ran back onto the field for the second half, I marched triumphantly into the family room with Salisbury Steak and Mashed potatoes.  I took the picture below before I did the only thing that made sense at the time – I poured the delicious sauce all over the mashed potatoes. Man oh man, is it ever good.

Salisbury Steak and Mashed Potatoes

Why You’ll Want to Buy 5 in 5 Before the End of the Day

I am completely infatuated with this cookbook and wish there was a way I could put a copy in everyone’s hands. When I think of words to describe 5 in 5,  the first to pop to mind are exciting, fun, and delicious.  Delicious is a given – with it being Chef Symon and all – but exciting and fun aren’t often words that come to mind with cookbooks. Yet, look at the evidence:  Here I am – Exhibit A – someone who has been a food blogger for YEARS and an avid cook/cookbook collector for twice as long as that. … and yet, here I am, running for a camera because of “extra vibrant colors” and having fun with a new little pasta.

I may or may not have held one up and pictured a little Samurai Warrior underneath it.

And, there I was challenging myself to cook a recipe within a set amount of time. I sort of had my own little cooking competition with myself.  Of course I won. Yay, me!

The recipes in this collection are, obviously, ideal for game days – they’ll get you in and out of the kitchen in no time at all. The Lazy Meatball Kebabs with Yogurt are lined up to be my meal next Football Sunday.

Below are a few of the other recipes from 5 in 5:

  • Cavatelli with Cauliflower and Red Pepper Flakes
  • Lazy Meatball Kebabs with Yogurt
  • Fried Bologna & Egg
  • Spicy 50/50 Burger
  • Chicken Marsala
  • Garlic Chicken with Asparagus
  • Pork Schnitzel
  • Swiss Steak
  • Bricked Grilled Chicken with White Bean Salad
  • Grilled Skirt Steak with Chickpea Salad
  • Caramelized Banana Sundae
  • Salted Caramel Sundae
  • Ultimate BLT
  • Philly Cheesesteak with Provolone
  • Salmon with Rosemary and Garlic
  • Turkey and Avocado Melt
  • Poached Eggs Parmesan
  • Sloppy Mikes
  • Eggs in Hell
  • Plus Many more!

In the front of the book, you’ll find timesaving tips, Chef Symon’s favorite flavor combinations, and great pantry advice.  The book’s filled with gorgeous photos, including photos of Michael Symon and his ridiculously beautiful wife.

If you love great food and love looking like a superhero to your family, you’ll want to order your own copy of Michael Symon’s 5 in 5: 5 Fresh Ingredients + 5 Minutes = 120 Fantastic Dinners today. This cookbook would also make an IDEAL gift for just about everyone on your Christmas list.

As for me, I have to end now. I’m still undecided on the next recipe I’m going to make.  Will it be Sloppy Mikes, Ultimate BLTs, Salted Caramel Sundaes....

Crazy About Pies by Krystina Castella: A Collection of Pie Recipes Like None Other!

May 6, 2013 By Joi Sigers

Crazy About Pies and Salted Caramel Ice Cream Pie

The most recent cookbook I was sent to review was Crazy About Pies by Krystina Castella.  Being a pie fanatic, I tore into this cookbook the minute it arrived.  The first thing I noticed was all the gorgeous, high quality pictures included throughout Crazy About Pies.  While I love (and even collect) ALL cookbooks, I have a special place in my heart for cookbooks with beautiful, colorful pictures.

Choosing which pie I wanted to make first was a toughie.  The author has managed to round up the most incredible pies in the world for one essential pie recipe collection.

Here are just some of the pie, filling, and crust recipes included:

  • Happy Pop-in-the-Oven Tarts (think homemade Pop Tarts!)
  • Fruit Tarts
  • Blackbird Pie
  • Chilly Mil Chocolate S’more Pie
  • Pina Colada Cream Pies
  • Shaker Lemon Pie
  • Roasted Sweet Potato Marshmallow Pie (!!!)
  • Concord Grape Pies
  • White Chocolate Peppermint Mousse Pie with Pretzel Crust (Ideal for Christmas)
  • Mincemeat Pie
  • Graham Cracker Cookie Crust
  • Gingersnap Crust
  • Cream Cheese Crust
  • Blueberry Pies
  • Three Citrus Chiffon Pie
  • Truffle Pies
  • German Chocolate Pie (have mercy!)
  • Chocolate Almond Tart
  • Banana Cream Pie with Candied Walnuts
  • Pie in a Jar (unique, beautiful, and delicious gift idea)
  • Coconut Custard Pie
  • Rhubarb Pie with Graham-Flour Crust
  • Sweet Cherry Pie with Cream Cheese Crust
  • Classic Apple Pie
  • Baked Strawberry Pie with Oatmeal Crust
  • Christmas Grasshopper Pie
  • And A LOT more!

This list is just to whet your appetite, there are countless other pie recipes, crust recipes, and filling recipes.  There’s also a wealth of information every true pie lover must have at his or her disposal.  From making the perfect pie crust to decorating tips – with a slew of other tips and helpful advice in between.

Crazy About Pies  isn’t just a pie recipe collection – it’s an education in making perfect pies. Pies 101, if you will.

As I said, above, one of the first things that made me fall in love with this cookbook was the beautiful pictures. Another thing I love about Crazy About Pies is the fact that includes “special occasion” recipes and “holiday recipes.”  I’m ALL ABOUT holidays and special occasions, so when cookbooks include recipes and ideas to make these special days even more special, I get giddy.  This cookbook includes pie recipes for Christmas, Weddings, Valentine’s Day, Showers, summer events, Fourth of July, Easter, Halloween, Jewish holidays, and Thanksgiving/Autumn.

Basically, Crazy About Pies has everything I love and nothing I don’t.

If you love pies, I promise you one thing: You will be wild about Crazy About Pies! Whether you’re just learning to make crusts and pies or you’ve been making pies for more years than you care to count, this simply must be the next cookbook you buy.

You can find Crazy About Pies on Amazon (simply click the link). However, due to the awesomeness of the cookbook (and stellar reputation of the author), the quantities are dwindling fast! I’d head over to Amazon right away and grab one if I were you.  Amazon always replenishes their stock quickly, so don’t sweat it if the quantities actually run out – simply check back on it in a day or two.

If Amazon DOES run out and you don’t want to wait another minute, you can also find Crazy About Pies here.

Photo Above: The pie shown in the photo at the top is the first pie I made from the cookbook. It’s the Salted Caramel Ice Cream Pie (with a Pretzel Crust).  Click the link for the recipe!
