Creamy Salsa Dip: Perfect for New Year’s Eve, New Year’s Day or Anytime…

Creamy Salsa Dip
When I was sent the recipe for Creamy Salsa Dip –  created by Chef Anthony Stewart from Pritikin Longevity Center + Spa  – I rounded up the ingredients immediately. I knew this was something I had to make immediately.

I am a dip fanatic and anything that calls for both sour cream AND green onions is something I have to have in my life.

This creamy and delicious dip has a lot going on for it. For one thing, most of us already have the ingredients on hand. I only had to grab fresh sour cream because Christmas Day had confiscated every container I owned.

I also love that it’s inexpensive to make – as in very inexpensive. Post-Christmas shopping, we could all use that, right?!

The best thing about the dip, however, is the taste. It is outrageously delicious. I served mine with Glutino Crackers and Veggie Chips. When I break it out for football on TV later, I’ll serve vegetables with it.

After I made one batch and tasted it… I made another right away. It’s THAT yummy.

Creamy Salsa Dip by Chef Anthony Stewart

  • 1/2 cup yogurt (plain, nonfat)
  • 4 tablespoons sour cream (reduced-fat)
  • 1/4 cup green onions finely chopped (white and light green parts only)
  • 1/2 teaspoon cumin ground
  • 2/3 cup salsa ( (non chunky varieties)
Instructions
  1. Mix by hand all ingredients, except for 1 tablespoon of green onions (which will be used as garnish topping).

Roasted Red Pepper Dip Recipe

I love, love, love, love to experiment with different dips and sauces. Hummus, chip dips, cheese dips, spinach-artichoke dips… the list goes deliciously on forever.  We watch a great deal of sports around our home and simply can’t imagine any of our games without snacks.  Dips, spreads, and sauces are favorites of all.

A favorite ingredient for these dips and spreads is roasted red pepper. Not only does it amazing, it looks gorgeous!  The Roasted Red Pepper Dip below has an ingredient you might be surprised to see.  Trust me, though, this dip recipe can’t be beat.

Roasted Red Pepper Dip

1 x 12 oz. package House Premium Tofu Extra Soft or House Organic Tofu Soft
2 cups roasted red peppers
1 cup mayonnaise
1 tsp. black pepper
1 tsp. garlic salt
1/2 tsp. salt

Blend all ingredients together.

Cover and chill at least 2 hours. Serve with vegetables, pretzel rods, crackers or even seafood.

Here’s another great snack or tailgating idea: Grab some extra special sliced meat from your store’s deli.  I practically live at a local Kroger (honestly, sometimes I think I’m there more than the workers or manager), and I’ve tried a wide variety of their meats.  A recent addiction is called Cajun Turkey and you have to try it to believe it.  Buffalo Chicken, Bourbon Chicken, Bourbon Ham, and Buffalo Turkey are all also outstanding.

Have it sliced right there at the deli – they’ll do it for free.

Buy some pretzel sticks (the small ones).  When you’re ready to serve your snacks, cut off small pieces of meat (the Cajun Turkey is stupid good for this!) and pierce each piece with a pretzel stick.  Arrange on a platter and serve alongside a small bowl of honey mustard, horseradish, or even barbecue sauce – the condiments you choose pretty much depend upon your meat selection.  Honey or Spicy mustard is just about always perfect, though – the pretzels LOVE mustard!

Tailgating Potato Dip With Avocado? Boom Chicka Wow Wow!

Drop Kick Idaho Potato Dip
Yield: 8 servings

Hummus:

2/3 cup water
1/4 cup 2% milk
2/3 cup Idaho® potato flakes
1 ripe medium avocado, peeled, pit removed
1/2 cup light sour cream
2-3 tablespoons lime juice
2 medium garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon salt

Topping:

1/2 cup diced fresh tomatoes
2 tablespoons chopped cilantro
1 medium jalapeno, seeded and finely chopped
1/4 teaspoon salt

Directions

  1. Place all Hummus ingredients in a blender, secure with lid and puree until smooth.
  2. Combine and mix together all Topping ingredients in a small bowl.
  3. To serve, place hummus in a medium size serving bowl and top with tomato mixture.


Serving Suggestion:
Serve with baked pita chips or assorted vegetables such as red bell pepper slices, jicama, squash rounds, cucumber rounds and carrots.

Estimated Nutritional Analysis per Serving:
130 calories, 10 g fat, 0 g trans fat, 5 mg cholesterol, 240 mg sodium, 9 g carbohydrates, 3 g dietary fiber, 2 g protein

Fruit Dip That’ll Have Them Begging for More Fruit

We all know that fruit is wonderfully healthy for us and we try to put it in front of our families as often as possible.  Sometimes it’s a hit, sometimes not so much.

I love fruit so much that it’s like dessert for me, but not every member of my family feels the same way.  I encourage my husband to eat more fruit with Cottage Cheese and vanilla yogurt (usually with added nuts or granola).  My oldest daughter, Emily, is a huge fan of breakfast food, so I can easily serve her raspberries, blueberries, strawberries, and blackberries in oatmeal, in pancakes, or alongside French Toast.  Both of them also like fruit salads and cereal with fruit.

Our youngest daughters, Brittany and Stephany, have always been a little bit of a challenge – especially Brittany.  The following Fruit Dip recipe (along with caramel sauce for apples and pears) is one sure-fire way I can get fruit into ALL of my family members.

Delicious Creamy Fruit Dip Recipe

1 (8 oz) package cream cheese, softened
1/2 cup sour cream
1/4 cup sugar
1/4 cup brown sugar
2 Tablespoons of your favorite syrup
(not butter-flavored or light, though)
Fresh Fruit
(or you’ve defeated your purpose!)

In a small bowl, combine the cream cheese, sour cream, sugars, and syrup. Beat until smooth and creamy. Chill until ready to serve.

This fruit dip is excellent with strawberries, apples (stir in a little caramel sauce in place of the syrup for an extra treat with apples), pears, peaches (have mercy!), grapes, blackberries, your fingers…. did I type that out loud??

Another Idea: If you’ve made a killer fruit salad, this dip is delicious and beautiful when drizzled over the whole shebang.

Yield: 2 delicious cups
